To celebrate our 7th birthday we have decided to brew a pair of 7% IPAs. Two Plus Five sees a 2 hop whirlpool addition and a 5 hop dry hop addition. While Three Plus Four is citrus driven this one is all about tropical fruit. The whirlpool additions lay down some geraniol rich Mosaic and Chinook that will come out the other side of fermentation with plenty of citrus and passion fruit to lay down a foundation for the dry hops to be shine. Dry hopped with Mosaic, El Dorado, Cashmere, Bru-1 and Idaho 7 we get lots of passion fruit, peach, guava and pineapple bursting out of this. A low bitterness and very fluffy grist enhances the juicy perception.
