We have gone real old school for this West Coast IPA as part of this pair of contrast IPA’s. That means citrus, pine, bitterness, some caramalized malt character and a clean dry finish.Going back to classic IPA’s that had a satisfying malt character that interplayed so well with bitterness and the had deep hop character all the way through the sip. Here we see Simcoe and Citra driving aromatics of grapefruit, dank pine, lemon and some bright stone fruit and a hint of tropical fruit. Again, Centennial does it’s job on the hot side through numerous additions laying down the floral and citrus notes. A more malty grist than our more recent West Coasts.
